There’s no denying that thin mint cookies are the best girl scout cookie—their minty, chocolatey goodness is downright addictive! Every time girl scout cookie season rolls around, I find it hard not to blow the budget on way too many boxes of these heavenly chocolate morsels. I knew that a copycat recipe was desperately needed! It took a bit of testing, but I’ve developed what I believe to be the best, easiest, and cheapest copycat thin mint cookies recipe. They fit right in with all of our Oreo Recipes too!

To make these divine cookies, you’ll only need three simple ingredients: Oreos, chocolate chips, and peppermint extract! Simply remove the cream from your Oreos, melt your chocolate, add your peppermint extract, coat your cookies, and boom! You’ve got fresh, luscious, homemade thin mints! Use your homemade thin mint cookies in your favorite dessert recipes, as a fun ice cream topping, or of course by themselves—all year round!

Do I need to temper my melted chocolate?

Nope! Tempering chocolate is a difficult process that I try to avoid. Because of this, I like to use plain old melted chocolate chips to coat my thin mint cookies. The only difference this makes is that your cookies will not be set at room temperature—you will need to store them in the fridge or the freezer to ensure that the chocolate coating remains hard.

Can I use chocolate melting wafers instead of chocolate chips?

Absolutely! If you’d like your copycat thin mints to be able to set at room temperature, using chocolate melting wafers is the way to go! These specialty dipping chocolates have a slightly different flavor than pure chocolate, but they are easy to use and will leave you with beautiful-looking cookies.

Can I make copycat thin mints gluten-free?

Yes! Now that Oreo has come out with a gluten-free version of milk’s favorite cookie, you can easily make these thin mints gluten-free. Alternatively, you could also make a batch of homemade crunchy chocolate cookies to dip into your mint chocolate coating.

Do I have to scrape the cream filling out of my Oreos?

Not necessarily. If you’re feeling lazy, you can totally dip your Oreos whole into your chocolate mixture. The end result will taste a little more like a mint Oreo rather than a thin mint, but it’s delicious just the same.

Ingredients You’ll Need

  • Oreo CookiesYou’ll use the dark chocolate “cookie” part of your Oreos as the base of these copycat thin mints. The crunchy texture adds the perfect snap to these minty, chocolatey cookies.
  • Chocolate Chips—Creamy chocolate chips are melted down to create the ganache-like chocolate that will coat each of your copycat thin mints. I prefer to use semi-sweet chocolate chips for this, but you could also use milk or dark chocolate.
  • Peppermint ExtractA generous splash of peppermint extract is added to the melted chocolate chips to give your copycat thin mints that signature minty flavor. For a slightly less minty cookie, reduce the amount of extract you use by half.

How to Make Copycat Thin Mints

Prepare your Oreos by separating each cookie in half. Using a knife or a spoon, scrape the cream filling away—you won’t need the cream filling for this recipe.

Melt your chocolate. Place your chocolate chips into a microwave-safe dish and heat in the microwave in 30-second intervals until melted. Remember to stir the chocolate frequently.

Once the chocolate is completely melted, add your peppermint extract.

Dip your cookies into your chocolate and mint mixture, being sure to thoroughly coat each cookie. Place your freshly dipped cookies onto a parchment-lined baking sheet and allow them to set in the freezer for about 15 minutes. Once your cookies are set, enjoy!

Give your Oreos a twist when splitting them in half. Twisting the two chocolate cookies in opposite directions when pulling them apart will help to keep them from breaking.

  • 1 Cup Chocolate Chips
  • 1 tablespoon peppermint extract

Instructions

  1. Begin by splitting your Oreos in half
  2. Scrape all the cream out of the middle, you can set aside the cream or eat it! You won't need it for these cookies!
  3. Melt your chocolate in 30-second intervals in the microwave
  4. Once completely melted, add your mint extract
  5. Coat your cookies in chocolate and place aside on a tray or plate
  6. Refrigerate or place in the freezer for about 15 minutes to allow the chocolate to harden
