How to Make King Ranch Beef Casserole in a Crock Pot

If you keep up with our new recipes, you know I recently tried out Crock Pot King Ranch Chicken Casserole for the first time and straight up fell in love with it! Lo and behold, Michael was in the store this week picking up groceries and beef stew meat was marked down to $1.99 per pound! He called to ask if I wanted some. I immediately said yes and knew exactly what I was going to make! So, now you have this scrumdiddlyumptious Crock Pot King Ranch Beef Casserole recipe! Yum!
Little man, aka Ryder, joined me in the kitchen for this recipe. He was my dumper and stirrer. I did the cutting, layering and handling of the raw meat, but he had a blast learning how to cut up peppers, measuring ingredients and pouring everything in to give it a good stir. I love that he is learning life skills along with a little bit of math! That is a win win in this Momma’s book!
What You Will Need
Ingredients Needed
- 1 red pepper, chopped
- 10.5 oz can of cream of chicken
- 1 green pepper, chopped
- 10.5 oz can of cream of mushroom
- 1 small yellow onion, chopped
- 2 cloves garlic, minced
- 10 oz can diced tomatoes with green chiles
- 2 lbs beef stew meat (you can use a roast and cut it up if it would be more economical)
- 1/2 teaspoon ground cumin
- 2 tablespoons sour cream
- 1 teaspoon chili powder
- salt and pepper to taste
- 12 corn tortillas, divided
- 2 cups shredded cheddar, divided

- Sharp knife
- Cutting board
- Measuring spoons
- Measuring cups
- Large bowl
- Wooden spoon
- 6 quart Crock PotorCasserole Crock Pot
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 6-8 hours on low or 3-4 hours on high

Ingredients
- 2 lbs Beef Stew Meat
- 1 red pepper chopped
- 1 green pepper chopped
- 1 small yellow onion chopped
- 2 cloves garlic minced
- 10.5 oz can cream of chicken soup
- 10.5 oz Can Cream of Mushroom Soup
- 10 oz can diced tomatoes with green chiles undrained
- 1/2 teaspoon ground cumin
- 1 teaspoon chili powder
- 2 tablespoons sour cream
- Salt and Pepper to taste
- 2 cups Shredded Cheddar Cheese divided
- 12 corn tortillas divided
Instructions
In a large bowl, mix together your peppers, onion, garlic, seasonings, sour cream, soups and tomatoes with chiles until well combined
Place 6 corn tortilla shells in the bottom of a greased 6 quart slow cooker or casserole crock pot (overlapping as necessary)
Spread half of your mixture from step 1 over your your tortillas
Top with half of your beef
Sprinkle half of your cheese evenly over top
Repeat layers once more
Cover and cook on low for 6-8 hours or high for 3-4 hours, turning your insert halfway through cooking if your slow cooker does not cook evenly

Can you use flour tortillas instead of corn tortillas?

Hi Gloria!I think you probably could, but it will change the texture and flavor of the recipe. The corn tortillas add a wonderful layer of flavor. The flour tortillas will most likely become soggy. However, if flour tortillas are your preference, and you want to give it a try, let me know how it goes!
